COLUMBIA, S.C. (WIS) - How about some Marzipan’ Truffles and Coconut Chair Breakfast Cake for your holiday table?

Lere’ Robinson is a nutrition consultant with Alive Again and teaches cooking classes at Lere’s Barn in Irmo.

She joined Talk of the Town on WIS TV with a couple recipes that viewers will find can be made a bit healthier than usual.

Marzipan’ Truffles

1 1/2 cups ground almonds

2 Tablespoons plus 1 teaspoon maple syrup

3 Tablespoons plus 1 teaspoon coconut oil, melted

1 scoop pea protein powder

Pinch of salt

1 teaspoon almond extract

Mix all the ingredients together and knead until a dough forms

Refrigerate dough for 20 minutes

Roll into balls, dip in melted dark chocolate until well coated and place on a baking sheet lined with parchment paper. Store in fridge until ready to serve.

Optional: Sprinkle with crushed nuts before the chocolate sets

Lere’ adapted this recipe from her dear friends Rica and Karina Gerhardt.
