Peanut Party Mix Prep: 10 min Bake: 25 min Makes approximately 6 cups
12 oz Fiber One cereal 2 cups dry roasted unsalted peanuts 2 cups uncooked regular oats ¼ cup light margarine (Smart Balance) ¼ cup firmly packed brown sugar ½ envelope (¾ oz) hot-and-spicy fried rice seasoning mix 1 package (6 oz) dried cranberries
1. Preheat oven to 350 degrees. Combine first three ingredients in a large bowl; set aside.
2. Melt butter in a small saucepan over medium heat. Stir in sugar and seasoning mix and cook 5 minutes or until sugar dissolves, stirring constantly
3. Pour sugar mixture over peanut mixture in bowl; toss to coat. Spread mixture in an even layer in lightly greased 15 x 10 inch jelly roll pan.
4. Bake at 350 degrees for 25 minutes, stir twice. Remove from oven and stir in cranberries. Cool completely in pan on a wire rack. Store in an airtight container.
