4 cups whole wheat pastry flour (or ½ all-purpose & ½ whole wheat flour) 2 cups oat bran 1/3 cup crushed walnuts 1 cup packed brown sugar 1 tbsp + 1 tsp baking powder 1 tbsp + 1 tsp baking soda 1 tbsp cinnamon 1 tsp ginger 1 tsp salt 29 oz can Pumpkin Puree 7 egg whites 1/3 cup canola oil 1 cup orange juice Preheat oven to 375 degrees
Spray muffin pans with oil spray Thoroughly mix all dry ingredients in large bowl Wisk all wet ingredients in separate bowl Stir liquid ingredients into dry, using spatula to fold batter and all ingredients are moist Spoon batter into muffin tins. Place on rack in center of oven Bake for 20 minutes or until top springs back when toughed lightly. Tops should be golden brown when done.
