Mary Huffman's Peach Cobbler

4 cups peeled sliced South Carolina Peaches
1 teaspoon lemon juice
1 cup sugar
1 cup SELF-RISING flour
1 egg
1 stick margarine - melted

  1. Preheat oven to 375°.
  2. Spray an oven proof casserole dish with cooking spray.
  3. Slice peaches into casserole dish.
  4. Add lemon juice and stir.
  5. In a separate bowl, mix sugar, flour and egg. Crumble this evenly over the top of the peaches.
  6. Pour melted margarine over topping. DO NOT STIR.
  7. Bake at 375° for 30 – 35 minutes.
