(Columbia) Dec. 19, 2004 - For a dish that will have your family running to the table, try form WIS News 10 anchor Susan Aude's Corn Bake Recipe, a quick and easy side dish.
Susan says this recipe is perfect for those of you on-the go, "This is a great thing to bake at the very last minute, and it's really easy."
The simple ingredients for her corn bake include a box of corn muffin mix, a small container of sour cream, two cans of cream style corn, two eggs and a cup of butter. Before mixing them preheat your oven to 350 degrees.
Susan says it's a one-bowl wonder. Susan starts by whisking the two eggs and folding in the other ingredients. Put the mixture into a greased baking dish and bake for 40 minutes.
Ingredients:
2 16-oz. cans cream style corn
1 8½-oz. package corn muffin mix
2 eggs beaten
1 8-oz. carton sour cream
1 cup margarine melted
Cooking instructions:
Preheat oven to 350 degrees.
Combine all ingredients and pour in a 9 by 13 by 2-inch casserole.
Bake for 40 minutes.
Susan's corn bake is far from calorie-free, but for a low-fat alternative you could use fat-free sour cream, margarine and Egg Beaters.
