'Poor Chef' talks diabetes, gives new recipe for old favorite

COLUMBIA, SC (WIS) - Charles Mattocks, better known as "The Poor Chef", made a quick stop at the WIS-TV studios Tuesday morning as he tours the United States on a healthy mission.

Mattocks, the nephew of the late music-great Bob Marley, was diagnosed with diabetes 3 1/2 years ago.  

He's now using his diagnosis to be a voice for diabetics and pre-diabetics across the country as he travels in an RV, making stops at hospitals, clinics, doctor's offices and libraries.  Mattocks is on his second tour, reaching out to be people in the "diabetes belt".  His goal is to help them with changes in diet and lifestyle, and speak about how he deals with diabetes without the use of medication.

The next stop on the tour for Mattocks will be at the Palmetto Health Center for Advanced Wound Care in West Columbia on Tuesday.

He'll be there from 11 am until 2 pm.  The event at 2989 Sunset Boulevard is free and open to the public.

While on News 10 Sunrise Tuesday morning, Mattocks also shared a healthy take on deviled eggs.  The recipe for hummus eggs is as follows:



8 Boiled Eggs

1/2 Cup Hummus

Olive Oil




Boil eggs.  Once cooled, cut eggs in half and empty out yolk.

Drizzle with olive oil and then fill with hummus.

Add salt and pepper to the top to taste.
