Big Game Cooking Contest - January/February 2012:

#1 TINA'S TOUCHDOWN TACO DIP - Tina Finders (*winner)

2-8oz packages of cream cheese-room temperature 1-16 oz container French Onion Dip 1-lb ground beef 1 pkg taco seasoning 2 cups salsa-mild to hot; depending on how hot you want it 1-8oz bag finely shredded cheese(4 cheese Mexican) 3-tablespoons green onions-sliced Tortilla Chips or Corn Chips Directions: 1. Preheat oven to 350 degrees. 2. Spray a 13x9 baking pan with cooking spray. 3. In a large bowl mix together cream cheese and French onion dip. Stir well, making sure any large lumps of cream cheese are broken up. Spread mixture into the bottom of the baking pan and set aside. 4. In a large skillet; brown and drain ground beef. 5. Add taco seasoning to cooked ground beef and mix well. 6. Spread ground beef over cream cheese and French onion dip mixture. 7. Pour salsa over evenly. 8. Top salsa with shredded cheese and green onions. 9. Bake uncovered until bubbly all around and in the middle, about 20-30 min. 10. Remove from the oven and dig in with your favorite chips for dipping. * This recipe can also be made in a healthier version by using low fat cream cheese, lite french onion dip, ground turkey, low-fat cheese, and baked chips.

#2 BACON WRAPPED HOT DOGS - Henry West

Crock pot Bacon wrapped hot dogs Prep time 30 mins Cook time 4-5 hrs (varies by crock pot) Ingredients: 2 packs of hot dogs 1 lb bacon 2 lb light brown sugar 1 crock pot liner (recommended) Toothpicks Cut the hot dogs into 1/3's and roll the bacon around the hot dog piece. Cut the bacon leaving about a half inch overlapping the bacon and secure by running a toothpick all the way through at the bacon overlap. Depending on the size of the hot dogs the bacon might need to be stretched to wrap all the hot dogs. Repeat until all the hot dogs are wrapped. I typically do this the day before and store in a container in the fridge. To give time for the bacon to cook in the crock pot, start cooking about 4-5 hours before game time. Place half the bacon wrapped hot dogs in the crock pot and top with half the brown sugar. Place the remaining bacon wrapped hot dogs in the crock pot and top with the remaining brown sugar and turn the crock pot on HIGH. After cooking for 2-3 hours occasionally stir/rotate the bacon wrapped hot dogs on the bottom with ones on the top to give all the bacon wrapped hot dogs time in the sugar, that should be starting to melt. After 1 hour later the bacon should be done and ready to dip out and serve. The longer they are in the melted sugar the better they will be. The crock pot liner is very handy with clean up as the melted sugar holds it's heat very well and could burn hands, or it could be like syrup if left to cool too long.

#3 PIZZA ROLLS - Julie Boland

BT Pizza bites Roll out pizza dough 1 cup of mayonnaise 2 cups of shredded parmesan cheese 1 tomato- chopped 6 pieces of bacon- cooked 1 teaspoon dried basil 1 teaspoon dried oregano 1 teaspoon seasoned salt 2 dashes of pepper Preheat oven to 400. Roll out dough on stoneware. In small mixing bowl, mix mayo, basil, oregano salt, and pepper. Spread mixture on dough. Spread cheese bacon, and tomato ( in this order) on dough. Cook until cheese is golden. Using pizza cutter either cut into slices or bites. cooking time will be approx. 10 - 15 minutes

#4 CHILI SPAGHOTS - William Gedwell

Pronounced chili "speg gots." Service for four (4) 2--15 oz. Cans Brookdale Original Chili w/beans (available thru Aldi's) 1/2 lbs. Regular spaghetti. Preparation: cook spaghetti in quart pot place chili w/beans in separate quart pot. Bring chili w/beans to a boil place drained spaghetti in with the chili w/beans. Voila! it will be a taste you'll never forget. If you prefer it to be hot, just add a quarter cup of sliced jalapeno peppers.
