Recipe from Audrey Dewey of Bondville, Vt.
Prep Time: 15 minutes Total Time: 40 minutes
2 slices white bread 2 tbsp whole milk 1 lb ground beef 1/2 C grated parmesan 2 tbsp bread crumbs 2 eggs Salt, Black Pepper Butter (for greasing dish) 3/4 C peeled whole tomatoes, drained, coarsely chopped 4 oz. fresh mozzarella 1/2 tsp. dried oragano leaves
1. Set oven at 425 degrees.
2. Cut the crust of the bread and disgard. Put the bread and milk in a bowl and mash it until it is pasty. Transfer it to a mixing bowl and add meat, parmesan, bread crumbs and eggs.
3. Season lightly with salt and pepper, then mix everything together with hands. Grease bottom and sides of a 10 inch pie plate with butter.
4. Put in ground meat mixture and push it down until it is evenly spread out. Cover with tomatoes. Cut the mozzarella into strips and arrange them in a spoke like appearence. Sprinkle oregano on top and bake in oven for 20 minutes.
5. Let settle for 5 minutes. Transfer to serving plate. Serve hot or lukewarm. Cut it like a pizza.
