3 eggs, beaten

½ cup milk (skim or 2%)

¾ cup reduced fat mayo

2 tablespoons flour

1 pkg frozen spinach, defrosted and water squeezed out

½ cup swiss cheese, cubes (low fat)

½ cup chopped scallions

Directions:  Preheat oven to 375.  Combine all ingredients and mix well.  Bake in glass pie dish, sprayed with PAM, or, if you want quiche with crust, pour into prepared pie crust.  Bake for 45 minutes.

  • Kershaw County Farmers Market recipe for VEGETABLE "PASTA" ALA MARINARA
    Ingredients:

    1 to 1 1/2 pounds ripe tomatoes, about 3 large tomatoes
    2 garlic cloves, peeled and minced
    1 Onion Diced Small
    3 tablespoons olive oil for Sauce
    2 tablespoons olive oil for Vegetable Pasta
    1/4 cup chopped fresh basil
    1/2 teaspoon salt, or to taste or not at all if watching sodium content
    black pepper, to taste
    1 pound vegetable spaghetti (zucchini and yellow squash spiralized) on a spiralizer such as Joye Chen Spiralizer or a Saladacco
    freshly grated Parmesan cheese for serving or Pine nut Parmesan (see recipe below)
    Preparation:
    Peel tomatoes by scoring at stem ends, blanching them in boiling water for about 30 seconds and then shocking in ice water until cooled about 30 seconds; remove seeds, straining juice into a bowl. Save the juice and discard seeds.

    In a large heavy bottomed pot over medium high heat (adjust heat as necessary as you do not want to burn your onions), saute' the onions in the olive oil until translucent( about 5 minutes) add the garlic and saute to release flavors about 3 minutes.

    Add tomatoes with juice and simmer the sauce for about 10 minutes. Add the basil to the sauce and cook for about 3 minutes to release the flavors. Transfer the sauce to a food processor. Pulse quickly to chop roughly. Pulse more for a smoother sauce, if desired. Add salt and pepper and keep warm.

    Saute' the "veggie" pasta in a heavy (cast iron if you have it) skillet on medium high heat in the 2 tablespoons olive oil until translucent (about 5 minutes until just tender) Place "veggie pasta" on a plate of your choice and top with the fresh tomato sauce. Garnish with more fresh basil and freshly cracked black pepper. Serve immediately with Parmesan or Pine Nut Parmesan cheese.

    Serves 4 to 6. 

    Pine nut Parmesan
    1 cup pine nuts, toasted
    1 Tablespoon nutritional yeast flakes
    1 ¼ teaspoons salt

    Put all ingredients in a food processor and pulse until the consistency of parmesan cheese is reached, about 20 to 30 pulses. Store in an air tight container in the refrigerator for up to 2 months. Makes 1 cup Pine Nut Parmesan.

    ½ cup Jimmy Dean Sausage Crumbles
    2 tablespoons each chopped green bell pepper and onion
    2 eggs, beaten
    2 flour tortillas (10 inch), warmed
    ¼ cup (1 ounce) shredded Mexican cheese blend
    1. Cook and stir sausage, green pepper and onion in medium nonstick skillet over medium heat 5-6 minutes or until sausage is thoroughly heated and vegetables are crisp-tender.
    2. Add eggs; cook and stir 3-4 minutes or until set.
    3. Spoon half of the egg mixture down center of each tortilla; top with half each of the cheese and salsa. Fold in opposite sides of each tortilla, then roll up.
    4. Serve with sour cream and avocado, if desired.

Monterey Sausage Casserole

Preheat oven to 400. Brown the ground pork on the stove top. Add in 2 cups of the cheese. This will create a gooey meaty/cheese mix. Place in a greased baking dish (I use a 9x9 dish) In a separate bowl, whisk together mix milk, eggs and bisquick. Add to the top of the cheesy/meaty mixture. Place in a preheated oven for 20-25 minutes until the top is golden brown. Spoon out and sprinkle remaining cheese onto top. 

Variations on this include using cheddar.. or adding some onion, bell pepper, garlic, salt and pepper
